Smoked Chicken & Cheese Potatoes

Ingredients:

  • 2-3 chicken breasts
  • 1 (1lb) bag of shredded hash browns
  • 1 can cream of chicken soup
  • 8 oz sour cream
  • 6 oz shredded cheddar cheese
  • 1/2 cup butter
  • 1 onion chopped

Cooking Instructions:

  • Smoke chicken breast on Big Green Egg.
  • Cut into small pieces.
  • Using a BGE Parlla Pan, sauté onion in butter, add potatoes, soup, sour cream,cheese and chicken. Stir well.
  • Spray bottom and sides of grill safe casserole dish (9x13) with olive oil.
  • Pour into pan.
  • Cover with foil. Bake for 30 minutes at 350 degrees in Big Green Egg.
  • Remove foil, cover casserole with extra cheese. Bake for additional 15 minutes.

RUM PINEAPPLES

Ingredients:

  • 2 pineapples (cut into good size chunks or rings)
  • 2 lbs. brown sugar
  • 1/4 cup Rum

Instructions:

  • Combine brown sugar and rum in bowl.
  • Transfer into a gallon size bag.
  • Let sit for 2 hours.
  • Cook pineapple chunks indirect on Big Green Egg at 350 degrees for 15 minutes.
